Guacamole Cones

Ashley and Michelle decided to try out new Vegetarian recipes.  This recipe they chose to go with Layered Mexican Tortilla Cheese Casserole.  The Guacamole Cones complimented the Casserole very well.  However, we all wanted two instead of one.

Ingredients
6 (6-inch) flour tortillas
1 tablespoon vegetable oil
1 teaspoon chili power
2 ripe avocados
1 1/2 tablespoons fresh lime juice
1 tablespoon finely chopped green onion
1/4 teaspoon salt
1/4 teaspoon black pepper
Dash hot pepper sauce (optional)
2 to 3 plum tomatoes, chopped

Directions
Pre heat oven to 350 degrees.  Line baking sheet with parchment paper.

Cut tortillas in half.  Roll each tortilla half into cone shape; secure with toothpick.  Brush outside of each cone with oil; sprinkle lightly with chili powder.  Place on prepared baking sheet.

Bake 9 minutes or until cones are lightly browned.  Turn cones upside down; bake about 5 minutes or until golden brown on all sides.  Cool cones 1 minute; remove toothpicks and cool completely.

Cut avocados in half; remove and discard pits.  Scoop avocado pulp from skins and place in medium bowl; mash with fork.  Stir in lime juice, green onion, salt, black pepper and hot pepper sauce, if desired, until blended.

Fill bottom of each tortilla cone with about 1 tablespoon chopped tomato; top with small scoop of guacamole and additional chopped tomatoes.  Serve immediately.

Yield: 12 cones
