Pumpkin Bread

I found this recipe in the newspaper. It is Lions House recipe for Pumpkin Bread. It is very good. I like it because it isn't dry like some breads but very moist.

Ingredients
1 and 1/3 cups vegetable oil
5 eggs
1 16-oz. can pumpkin
2 cups flour
2 cups sugar
1 tsp. ground cinnamon
1 tsp. salt
1 tsp. ground nutmeg
1 tsp. baking soda
2 3-oz. packages instant vanilla pudding mix
1 cup chopped nuts

Directions

Preheat the oven to 350°. Combine oil, eggs, and pumpkin into a large mixing bowl and beat well. In a separate bowl sift together flour, sugar, salt, cinnamon, nutmeg, and baking soda. Add to pumpkin mixture and mix until blended. Stir in pudding mix and nuts. Pour onto a greased 4 x 8-inch loaf pans. Bake for 1 hour. Makes 2 loaves.

Optional: I added 1/2 teaspoon each of cloves and ginger.

Yield: Makes 2 loaves
