Ingredients:
1 head of lettuce (chopped)
1 bag of baby spinach
1 package sliced mushrooms
1 can mandarin oranges (drained)
Purple onion - sliced into rings
Package of grated Swiss or mozzarella cheese
Directions:
Mix together in a large bowl
Dressing:
3/4 tablespoons poppy seeds
1/3 cup white vinegar
3/4 cup oil
1/3 cup sugar
1/4 cup grated onion
2 tablespoons mustard
3/4 teaspoons salt
Directions:
Combine in blender and mix. Add right before serving.
Almonds:
3 tablespoons sugar
1/4 cup butter
1/2 cup almonds
Directions:
Melt butter and add sugar. Coat almonds and bake for 20 minutes on 300 degrees - stirring every 5 minutes. Add to salad.
Yield: 14 servings.
