Cold Chicken Pasta Salad

I love pasta salads. I recently came across this recipe and decided to try it. It is a keeper. For fresh basil, I use Gourmet Garden Basil. You squeeze the basil straight from the tube. It stays fresh in the fridge.

Ingredients:
1 8 ounce package of Rotini pasta (I use whole grain)
3 cups cubed cooked chicken
3/4 cup diced celery
1 cup diced tomatoes
1/2 cup mayonnaise
1 teaspoon salt
1/8 teaspoon pepper
3/4 cup sour cream
2 teaspoon lemon juice
1 teaspoon dried oregano or 1-1/2 teaspoon fresh oregano
2 tablespoons dried basil or 2-1/2 tablespoons fresh basil

Directions:
Cook and prepare pasta as directed on package. Drain and rinse with cold water until pasta is cooked. Add chicken, tomatoes, and celery. In your blender or food processor, blend well mayonnaise, salt, pepper, sour cream, lemon juice, oregano, and basil. Put the dressing into a storage container and chill for one hour. Add to salad, toss well making sure the noodles and veggies are coated all over.

Yield: 10 servings
