Baked Gnocchi

An hot and hearty vegetarian dish. 

Ingredients
1 package (about 16 ounces) gnocchi (frozen or vacuum-packed)
1/4 cup olive oil
3 cloves garlic, minced
1 can (14 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
1 package (10 ounces) frozen spinach, thawed and squeezed dry
1 teaspoon Italian seasoning
salt and pepper to taste
1/2 cup grated Parmesan cheese
1/2 cup (2 ounces) shredded mozzarella cheese

Directions
Preheat oven to 350 degrees.  Grease large casserole or gratin dish.

Cook gnocchi according to package directions.  Drain and set aside.

Meanwhile, heat oil in large skillet over medium heat.  Add garlic; cook and stir 30 seconds.  Add tomatoes, tomato sauce, spinach, and Italian seasoning.  Season with salt and pepper;  cook and stir about 5 minutes.  Add gnocchi; stir gently.

Transfer gnocchi mixture to prepared casserole.  Sprinkle with cheeses.  Bake 20 to 30 minutes or until casserole is bubbly and cheese is melted.

Yield:  4 - 6 servings
