Christmas morning always starts out with sweet rolls and this casserole. My family really enjoys it. This is great for a special brunch and versatile for a satisfying family supper.
Ingredients
1/2 pound sliced bacon or cubed ham
1/2 cup chopped onion
1/2 cup chopped green pepper
12 eggs
1 cup milk
1 package (16 ounces) frozen hash brown potatoes, thawed
1 cup shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon salt
1/8 garlic powder
Directions
In a large skillet, cook bacon/ham over medium heat. Remove to paper towels; drain, reserving 2 tablespoons drippings if using bacon and crumble. Add a little oil if using ham. In same skillet, saute onion and green pepper in drippings until tender; remove with a slotted spoon.
In a large bowl, whisk the eggs and milk. Stir in hash browns, cheese, salt, pepper, dill, onion mixture and reserved bacon.
Transfer to a greased 13 x 9 inch baking dish. Bake, uncovered, at 350 degrees for 35-45 minutes or until a knife inserted near the center comes out clean.
