Roasted Pepper Tortellini


This a very easy recipe that even Michelle and Blake can make. Infact, they did make this recipe and it was delicious. A side note--refrigerated tortellini cooks quickly, but you can also use dried tortellini in this pasta, sausage and pepper dish.

Ingredients
1 package (20 ounces) refrigerated cheese tortellini
5 Italian sausage links
2 tablespoons olive oil
1 jar (15-1/2 ounces) roasted sweet red peppers, drained. (We used 1/2 green pepper and diced into small pieces)
1 can (15 ounces) pizza sauce
1 cup shredded mozzarella cheese
2 tablespoons shredded parmesan cheese

Directions

Cook the tortellini according to package directions. Meanwhile, in a large skillet, cook sausage in oil over medium heat until no longer pink; drain. Cut into 1/4 inch slices.


Place the peppers in a blender or food processor; cover and process until smooth. Drain tortellini. Add the tortellini, pureed peppers and pizza sauce to the skillet; stir to combine. Cook for 5 minutes or until heated through. Sprinkle with the mozzarella and Paresan cheeses; cover and heat until cheese is melted.

Yield: 6 servings.
