Paella



My friend, Grant, gave me this recipe. Ashley said she ate it a lot while living in Spain this summer. They usually put seafood in it instead of chicken.

Ingredients
1/2 cup olive oil
1 cup chopped onions
5 to 8 cloves garlic minced
2 boneless skinless chicken breasts cut into bite sizes pieces
6 ounces sausage, if desired
2 large red bell peppers, chopped
2 tomatoes chopped or 6 roma tomatoes chiiopped
1 cup tomato sauce, optional
Hot water
5 chicken bouillon cubes, crumbled
salt to taste
Pinch of saffron (optional since it is very expensive)
Lemon wedes for serving

Directions
Use large frying pan or paella pan if you have one. Heat oil, add onions and simmer on medium for about 2 minutes. Add garlic and stir. Add chicken and sausage and cook for 5 minutes. Add red peppers and cook for 5 minutes. Add tomatoes and simmer for 5 more minutes. Add tomato sauce, if using, stir and simmer until chicken appears to be cooked. Add hot water until everything in pan is covered in water. **Keep track of how much water you add.
Add chicken bouillon cubes and season with salt, stir. Turn heat to high when mixture is lightly boiling, add rice. **For every 2 cups of water add 1 cup rice, or a 2 to 1 ratio. Add saffron if using.
Stir one more time. Reduce heat and simmer until water is cooked off, about 1 hour. Remove from heat and cool slightly. Before serving, generously squeeze on lemon juice.
Yield: 6 - 8 servings
