Sticky Sweet Thai Rice


Grant Carter gave me this recipe.  His wife went to Thailand and fell in love with this rice.  She beg the recipe out of the chef while she was there.  It is soooo good!  The secret is the Coconut Cream.  See picture.  I tried it with fresh pineapple.  Grant says mango is delicious with it.

Ingredients
1 cup Jasmine Rice - soak overnight. 
2 cups water
6 tablespoons sugar
3/4 cup coconut cream
pinch of salt

Directions
Soak rice over night in plenty of water.

Steam rice in 2 cups water until cooked.

Put coconut cream, sugar, salt in large skillet.  Bring to a boil and stir until it thickens.  Pour rice in and serve.  Delicious with mango or pineapple.
