Lemon Pie


We love lemon pie!  We have it every Thanksgiving, on Nicole's birthday, and several times during the year just because. 

Ingredients
1-1/4 cup hot water
1 cup sugar
1 tablespoon butter
Pinch of salt
1/4 cup cornstarch 
3 egg yolks
3 lemons, juiced to make 1/4 cup
Grated lemon rind
Cooked pie shell

Directions
Mix cornstarch, sugar, salt, and lemon juice.  Mix well.  Beat egg yolks; add to cornstarch mixture.  Add water.  Bring mixture just to boiling over medium heat and simmer gently for 5 minutes, stirring constantly.  Remove from heat.  Add butter and lemon rind.  Cool before putting in pie shell.
