Marge's Zucchini Casserole

Do you have an abundance of zucchini in your garden this summer? Aunt Marge gave me this great zucchini casserole recipe.

Ingredients:
1 package chicken bread stuffing made to directions
6 cups washed raw zucchini, shredded with skins on
2-3 cups grated cheese
2 cups sour cream
Salt and pepper to taste
2 teaspoons Italian Seasoning or to taste

Directions:
Mix all together adding sour cream last. Put in large casserole and bake at 350 degrees for 40 - 45 minutes or until center is slightly bubbling.

Did you know that zucchini can be shredded, and frozen for later. Especially the large ones, just remove the large seeds.
