This is a way easy meal to prepare. I like it because you can cook it using the microwave or conventional method. I usually make it ahead of time and freeze it for the future or have it ready in the refrigerator for dinner. This is a great meal to take in to a neighbor.
Ingredients:
2 pounds extra lean ground beef or ground turkey
1 teaspoon salt
1/2 teaspoon accent (For heart patients, don't use accent. Use garlic powder instead)
Pepper to taste
1 large onion, chopped
2 cups grated cheddar cheese
1 can cream mushroom soup, not diluted
12 large rolls (hoagie type)
Directions:
Microwave
In 3 quart casserole, microwave ground beef, covered at 100% power for 4 minutes. Drain grease. Break up meat. Add chopped onion. Microwave additional 3-4 minutes or until meat is no longer pink. Drain and break meat apart again if needed.
Add salt, accent, pepper, soup and cheese. Stir until blended. Cover and heat at at 100% power for 3-4 minutes or until hot.
Split rolls and remove some of the soft center. Fill with meat mixture. Replace top of roll. Wrap in paper towel, waxed paper, napkin, or sandwich wrap.
If meat mixture is already hot, one roll will only take about 15 to 20 seconds at 50%-60% power. Check by touching before adding more time.
To heat 4 rolls at a time, microwave at 50% power for about 1 minute or until hot to touch. Don't overcook.
Serve with tossed salad and you've got a great meal!
Conventional Method:
Brown meat in frying pan. Drain. Add salt, accent, pepper, onion, cheese and soup. Fill rolls as above. Wrap in foil. Heat in conventional oven at 350 degrees until warm, about 20 to 30 minutes.
Yield: 12 servings.
